1: Rather than buy a damn can or two of Libby’s pumpkin, buy two organic sugar pumpkins at Whole Foods.  Cut said pumpkins in half and roast for 2.5 hours at 325 degrees until fork tender.  Allow to cool, scoop from what’s left of the rind into giant colander, place plate over pulp, weight with water filled casserole to allow excess water to drain.  Puree in small batches in food processor.  Start bourbon-vanilla bean-spice reduction.
